-1 onion
-1garlic clove
-2 tomatoes
-1cup of lentils
-1cup of quinoa
-1carrot
- handful of spinach
- fennel seeds
- fried onion (optional)
- olive oil
- salt
- water
Chop the onion and garlic and fry it with extra virgin olive oil for about 3 min in a pan big enough for a litre. Add the chopped tomato for another 3 min. Use a blender to mash all the ingredients. Add boiling water, quinoa, lentils, chopped carrots, salt and let it cook for 20 minutes. Add the spinach and fennel seeds for about 4 minutes. Serve with fried onion on top. I got it from Ikea shop, probably not the most healthy thing, but it's optional.
Tip: you can add a veggie stock cube to the water to add nice flavour. My favourite is from @saykallo
